Where's My 7-Kinds-Of-Fiber Cereal?!

Last night my husband, Korry, and I took a stroll through the HEB Plus in Beaumont. I was determined to get myself some rice milk and CEREAL! So, to put this into perspective, I've already driven 30 minutes to a store other than my local HEB so I can get some items our store lacks, and I'm feeling giddy because I haven't had cereal for breakfast in well over a month. We make our way through the store, getting the necessary items on our list... and a whole lot more that we never even considered until they waved their hands and smiled at us from the shelves. As we round the corner to the cereal aisle I proclaim, "IIIII'm getting CEREAL!" This is from Skinny Bitch in the Kitch. I just made them gluten free. 
Ingredients: 
- Refined coconut oil, for greasing a baking sheet (Any oil or vegan butter would work) 
- 1 onion, cut crosswise into 1/3-inch-thick slices 
- 1/2 cup gluten free bread crumbs (Can also use bread crumbs that are not gluten free. The recipe calls for whole wheat bread crumbs.) 
- 1/2 cup cornmeal 
- 1 teaspoon fine sea salt
- 3/4 cup brown rice flour 
- 3/4 cup soy or rice milk

Oreo's Wheat Free Cousin

So, my husband and I went shopping and of course he finds all kinds of snacks for himself... one of which was a bag of Oreos. Are you kidding me?? Ugh! Thankfully, I found these, Newman-O's! They're wheat-free, dairy-free, and organic (look for the one with PURPLE on the package). If gluten is your issue these are NOT the choice for you, sorry! The package says, "Not a Gluten-Free

Refreshing Gelato

This evening I wanted something sweet and refreshing. Ice cream was out since I'm lactose intolerant, but I craved that cold, creamy goodness. Sherbet sounded good, but it's a dairy product too. First Steps



It isn’t easy to break a lifetime of bad habits, but that’s exactly what I’m trying to do. For years I had suffered from unexplained stomach pains and sickness. The first step to feeling better was the realization that I am lactose intolerant. Going dairy-free was difficult for me… I love ice cream, milk, and cheese, but for the most part I made it work. I found I had a threshold and as long as I didn’t cross it, I was safe. Then a few years ago the same stomach issues crept up again, regardless of whether I had eaten any dairy or not. My doctor tested me for a litany of illnesses, including Lupus. When all the blood-work came back negative he suggested allergy testing. That’s when I found out I am allergic to eggs, dairy, wheat, oats, and rye. Are you kidding me?! OK, no real baked goods, that’s a given. So what CAN I eat? Most wheat-free products still contain eggs and dairy, or they use oats as an alternative to wheat. Then to add insult to injury, many products seemingly unrelated to wheat have it in them anyway. What gives?? Unprocessed meats, fruits, veggies, rice, beans, and nuts are safe for me. They’re my “go-to” ingredients for meals, but what do you do when you just can’t shake those cravings for bread or cookies? You hunt for a substitute!


I’ve tried all sorts of alternatives and have found a few favorites, but there’s a lot I’m still learning. I hope that this blog will not only serve as a way for me to chronicle my journey, but also as a way for me to share the lessons I learn along the way.
