Breakfast Skillet Recipe

1/2 lb. bacon
6 cups packaged frozen cubed potatoes*
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1/2 cup onion, chopped
salt and pepper

In large, deep skillet, cook bacon over medium high heat until evenly browned. Remove from heat. Discard grease. Transfer bacon to a plate, pat dry with paper towels, and crumble. Set aside.

Reduce heat to medium. Cook potatoes according to package directions, stirring and flipping frequently. Drain. Stir in peppers and onion. Cook until vegetables are tender. Stir in bacon. Season with salt and pepper.
*Read the ingredient label carefully. 

Note: Instead of using frozen potatoes, peel and cube a pound of potatoes and boil for 15 minutes or microwave 5 to 7 minutes. Add to the recipe as directed.
