Dairy Free Rice Pudding

3/4 cup white rice
1/3 cup raisins
4 cups vanilla soy milk
3 Tbsp packed light brown sugar
1 tsp ground cinnamon
2 tsp vanilla

Place all ingredients in a 3 qt pan. Bring to a boil over medium heat stirring occasionally. Reduce heat to low and Cook uncovered 20 to 25 minutes, stirring frequently, until rice is tender; remove from heat. Cover; let stand 5 minutes. Serve warm or chilled with additional brown sugar and soymilk if desired. Cover; refrigerate any remaining pudding.

This pudding is wonderfully sweet and creamy, just like my grandma used to give me when I was little. *I added 1/2 tsp nutmeg to mine.
