Meatloaf, Smeatloaf, Double Beatloaf
I am the QUEEN of the kitchen (polishing my colander crown)! I was going to make chipotle burgers tonight, but being on a tight budget and knowing that burgers would last us one meal (and possibly a lunch the next day) came up with an alternative. I made chipotle meatloaf! It was AWESOME (please read in "Oprah voice")! Ground beef, ground turkey, chopped chipotles in adobo sauce, soup mix, cumin, chili powder, cayenne pepper... yum! Some veggies and... ok I'll admit I didn't time those right and we forfeited veggies tonight, but they're in the fridge ready to go for tomorrow's leftovers. I did make fresh cut baked fries though! No allergens and it was delicious, if I do say so myself... and I do.
